Octopus intellect studies can be kind of trippy. They're capable of a lot of cleverness and deduction,and some studies even show signs of emotive states. Although, I also enjoy tentacle sushi. I'm kind of a monster that way.

In my head canon, Andi just had no idea how to set up a room for an eight-year old so she's winging it with a shopping trip.
In an early draft, Amanda deliberately refused to bring Keisha along since it was her biological mom reclaiming her and not an adoption. I feel like Amanda is closer to Keisha than anyone else and wouldn't deliberately reject or deny her, but she'd still much rather not share her new life if given a choice.
There was a point in the early drafts where Keisha was so hurt by not being taken along, she did a heel-turn into villain territory. About 3/4 through the Truck arc I started thinking, "Christ, do I really want this revenge theme to keep being a thing?"
